Organic chocolate chip oatmeal cookie


This is one of my best cookie recipes that I have made by far, it is like a cross between a chewy granola bar and chocolate chip cookie. It is an easy and yummy chewy cookie recipe that the whole family will love. The dough can be stored in the refrigerator for 1 week and in the freezer for 3 months.

This recipe makes about 3 dozen


  • 1 cup or 2 sticks of organic butter
  • 1 cup of organic light brown sugar (can be reduced by 1/4 cup)
  • 1/2 cup of organic sugar (can be reduced by 1/8 of cup)
  • 2 organic eggs
  • 2 tsp of Pure vanilla extract
  • 11/4 cups of organic flour
  • 1/2 tsp of baking soda
  • 1 tsp kosher salt
  • 3 cups of  Bobs Red Mill 5 grain rolled hot cereal
  • 1 bag of semi sweet chocolate chips
  • 1 cup chopped macadamia nut or walnuts (optional)


In a large bowl cream together butter, sugar, vanilla extract and eggs one at a time with a hand mixer.  In separate bowl mix together flour, baking soda, salt. On low-speed in small batches slowly mix dry ingredients into butter mixture.  With a large spoon mix in rolled oat, chocolate chips and nuts.

Wrap cookies dough in plastic wrap and refrigerate for at least 1 hour.


To bake preheat oven to 350 degrees

Slice cookie 1 to 1 1/2 inches and bake for 14-16 minutes until brown.



When the moon hits your eye like a big pizza pie…That’s Amore!


What most people don’t know about me is that my father was born and raised in Harlem, NYC. Up until my grandmother past away in 1993 we spent many holidays and summer vacation in NYC. It has over 10 years since I been to NYC but the one thing that I miss almost as much as my grandmother is the food to be more exact …PIZZA! Man, when I was a kid there is nothing better than eating a slice while walking down street with cheese and sauce running down my arm. I was in heaven. Now everyone in NY has their favorite pizza palor. Over the years I have eaten at a lot of  palors in the Bronx, Harlem and manhatten I can honestly say I never had a bad slice.

Living in Kauai, Hawaii a pizza much less a slice is hard to find. Don’t get me wrong I do love living in paradise and I would have to think hard and long about trading that for a New York slice of pepperoni. Our options are limited we have the fastfood chains here that you take the kids to after soccer game and a high end spot that serves good pizza but really who the heck in this economy can afford to pay $30 for a large pizza? It better have some truffles or eatable gold in it. Right!

So once again I was force to being resourceful. I started crafting my own homemade pizza. Now I not in any way comparing my pizza to NYC (which I consider the holy grail of Pizza) but it’s pretty darn good. My pizza is definitely more rustic and I use cookie sheet.  For the 2 pizza which feeds 4 to 5 people cost $10.59.


I found a super easy pizza dough recipe on food network courtesy of Bobby Flay. This dough can be made ahead time and refrigerated/frozen. This particular time I double the recipe and made calzones for my kids to take to school for lunch.

3 1/2 to 4 cups bread flour, plus more for rolling (Chef’s Note: Using bread flour will give you a much crisper crust. If you can’t find bread flour, you can substitute it with all-purpose flour which will give you a chewier crust.)
1 teaspoon sugar
1 envelope instant dry yeast
2 teaspoons kosher salt
1 1/2 cups water, 110 degrees F
2 tablespoons olive oil, plus 2 teaspoons

Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.

Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

Roll out dough and to size of your pan. Again, I used a cookie sheet because I own a fancy pizza pan/stone.

Toppings as follows:

Sliced mozzarella


Homemade sausage ( see recipe below)

Sprinkle with Parmesan cheese and Italian seasoning.

Homemade Italian Sausage


1/2 pd of ground pork – You can replace with turkey or chicken

2 tbsp  Ground cumin

2 tbsp  Italian seasoning

1 tsp Kosher salt

1/2 tsp of Black pepper

Mix and store in plastic wrap.


What’s for dinner?


Here is one of family favorites recipes that I made the other night for dinner.

Chicken Parmesan, homemade marinara, Pasta and Caesar salad. The cost to prepare this entire meal cost around $25. Yes, you heard me $25 dollars to feed 4 people. It’s homemade, organic and delicious.  Vegetarian? Just replace Chicken breast with Eggplant. I hope you love this recipe as much as my family does.

Chicken Parmesan


  • 2 organic chicken breast – Tip slice 1 chicken breast length wise to make 2 servings
  • 1/2  cup organic flour ( I use Safeway’s Organics brand but any brand will do)
  • 3/4 cup of bread crumbs – Tip slice leftover bread in cubes and toast in the oven at 375 for 10 to 15 minutes then grind in the blender – I used leftover hamburger and hot dog buns. See picture below
  • 1/4 cup grated parmesan – Tip  buy the block and grate it yourself it is cheaper and taste better than shredded
  • 1 – 2 tbsp of Italian seasoning
  • kosher salt to taste
  • black pepper to taste
  • 2 organic eggs scrambled
  • 1 cup of marinara (see recipe below) 
  • 4 to 6 slices of mozzarella cheese 
  • 1 to 2 tbsp of olive oil for frying




Preheat oven to 375

Heat frying pan to medium heat and add 1 to 2 tbsp of Olive oil enough to coat the pan.

Mix flour, bread crumbs, seasoning, parmesan, 1/4 tsp of salt and pepper in bowl.  Lightly season chicken breast with salt and pepper.  Dip chicken breast in egg and then breadcrumb mixture.

Cook in frying pan 4 to 5 minutes per side until golden brown

Repeat with the remaining pieces of chicken. Set aside to drain.

Place chicken breast on an oven proof dish top with 1/4 cup of marinara and sliced mozzarella cheese.

Cooked in the oven 20 to 25 min minute until cheese is melted and slightly brown.


Homemade Marinara & pasta


  • 1 28 oz can of crushed tomatoes 
  • 2  garlic cloves chopped
  • 2 tbsp of Italian seasonings
  • 2 bay leaves
  • 1 tsp of sugar
  • 1 tsp of crush red pepper
  • 1 to 2 tbsp of olive oil
  • Salt & pepper to taste
  • Your choice of pasta prepared according to instructions on the box

Heat up pot to medium heat, add 1 to 2 tbsp of Olive oil to coat pan. Saute garlic for 30 seconds and reduce heat to low.  Add crush tomato and the remaining of ingredients.

Cover, stir occasionally and let simmer for at least 30 minutes. The longer you let it simmer the better the flavor with be.

Caesar Salad


  • chopped organic romaine lettuce
  • 1/4 Caesar dressing see recipe below
  • 1/4 cup of grated parmesan
  • croutons – Tip Follow bread crumb recipe above before toasting in oven toss with 1 to 2 tbsp of Olive oil, Italian seasoning, salt and pepper. 

Toss all ingredients together.

  • 1/4 cup parmesan cheese ( grated)
  • 4 anchovy fillets
  • 2 egg yolks
  • 1/4 teaspoon salt ( to taste)
  • 1/4 teaspoon pepper ( to taste)
  • 1 lemons, juice and zest of
  • 1/2 cup extra virgin olive oil ( good quality)
  • 2 garlic cloves


  1. In blender, mix egg yolks, garlic and anchovies into a paste.
  2. Add remaining ingredients EXCEPT olive oil. Mix a few seconds.
  3. Slowly add olive oil until dressing is thick and creamy. Add more or less olive oil depending on desired consistency
